The ingredient of Vegan Thai Pineapple Fried Rice

  • 3 tablespoons lime juice freshly squeezed
  • 4 tablespoons soy sauce low sodium
  • 2 teaspoons sriracha or supplementary further chili sauce
  • 5 teaspoons coconut sugar 1 tbsp 2 tsp or brown sugar
  • 1 teaspoon indian curry powder see observations clarification

  • 1 2 cup pineapple chunks i used frozen thawed
  • 1 2 cup cooked rice white or brown starchy varieties are best or aspire cauliflower rice see the notes
  • sauce stir fry see above
  • green onion sliced or scallion for serving
  • toasted peanuts chopped or cashews for serving
